Throughout the history of science, everything was written in Latin, it was a unifying language among scientists. Also, like Classical Greek, since Latin is a "dead" language, the meaning of its words will never change unlike words in "living" languages such as English, thus making it an optimal language to use, both due to it being tradition and because the meaning can never be confused with a new connotation-it will always be precise.
